Savory Tomato Eggs

This recipe is a perfect breakfast dish—savory, rich in flavor, and finished with beautifully runny eggs that melt into the tomatoes and can be scooped up with some bread.

Serves 2:

Ingredients:

  • 4 eggs

  • 1 red onion

  • 1 large garlic clove

  • 1 tbsp olive oil

  • 200 g canned minced tomatoes

  • feta cheese

  • parsley

  • Salt and pepper to taste


Procedure:

  1. Heat up the olive oil in a pan and fry the sliced red onion. Add in the minced garlic clove. Cook until the onion becomes soft.

  2. Add in the tomato, a small handful of chopped fresh parsley, and salt and pepper to taste. Option: can sprinkle with some chili flakes for a kick.

  3. Let cook for about 5 minutes and them crack the eggs on top of the mixture. Sprinkle some feta on top. Cover with a lid and let cook until the eggs are done. Be careful not to overcook the eggs—you want them to still be runny.

  4. Serve in the pan with some bread and enjoy :)
