South Bohemian Potato Soup

Comforting, creamy, and earthy.

This traditional South Bohemian soup is made with hearty, healthy ingredients and feels like a true forester´s meal. I really enjoy Southern Czech cooking for its simplicity and connection to local ingredients- what you find in this soup could be easily found in any Czech village; from foresting mushrooms, digging up potatoes, to gathering freshly laid hen´s eggs.



I hope you enjoy this recipe and give it a try! It really is simple to make, filling, satisfying, and filled with nutrients, such as B and D vitamins, potassium, and phosphorus from the mushrooms, vitamin C and magnesium from the potatoes, and protein and calcium from the eggs and cream.


Ingredients:

  • 5 yellow potatoes, cubed

  • 1 yellow onion, diced

  • 1 bay leaf

  • Caraway seeds

  • 2 large handfuls of fresh mushrooms or 1 handful of dried mushrooms

  • 2 cloves of garlic, minced

  • 8 large spoonfuls of sour cream

  • 1 large spoon of flour

  • 4 eggs

  • Salt and pepper to taste

  • Dill to garnish

Procedure:

  1. Wash and cube the potatoes and add to a pot. Dice the onion and also add to the pot. Add the bay leaf, caraway seeds, salt, and pepper. Add water until all is covered. Bring to a boil and cook until potatoes are tender.


  1. Meanwhile, chop the fresh mushrooms (or add the dried mushrooms that had been soaked in water before) and add to a pan with minced garlic and olive oil. Sauté until cooked.


  1. Once the potatoes are tender, add the mushroom mixture to the pot. Mix the flour with the cream and also add to the pot and bring to a simmer.


  1. Crack the eggs into the pot and carefully spread the eggs around the soup with a fork. Allow to cook for a couple of minutes and then serve. Add more salt and pepper to taste and remove bay leaf. Garnish with freshly chopped dill.
