An earthy, comforting, and creamy soup made from Czech lišky mushrooms.

Try this quick and simple Czech recipe that is extremely comforting and delicious. Best with fresh mushrooms from a farmer´s market, however dried mushrooms can also be substituted.

Ingredients

  • 2 handfuls of chopped lišky mushrooms

  • 4 small yellow potatoes

  • 3 cloves of garlic

  • 150 g whipping cream

  • 1 chicken bullion cube

  • a few sprigs of chopped parsley

  • 1/2 tsp. white vinegar

  • butter

  • salt and pepper


Procedure:

  1. Sauté the chopped mushrooms in some butter in a pot. Cook for a few minutes before adding in the minced garlic. Cook for a few more minutes.

  2. Add in the parsley and cook for a few more minutes. Add in more butter if it is sticking. Make sure to keep it at a decent heat so the garlic does not brown and turn bitter.

  3. Add in the chopped potatoes and the stock. Pour in the stock until the mix is just covered. 

  4. Let boil until the potatoes are tender- about 15 minutes. 

  5. Pour half of the mixture into a blender and blend until smooth. Add back into the pot.

  6. Stir in the vinegar and let sit for one minute. Then add in the cream and stir.

  7. Can be topped with fresh dill or served with a poached egg.
